Grapefruit Marmalade - The Best Marmalade Ever!

Grapefruit marmalade is sweet, yet still has this delicious and famous grapefruit bitterness. I make the easy version and my marmalade also have less sugar.

You can use this process to make marmalade from any citrus fruit or you can combine a few of them!

Here are the instructions for this grapefruit marmalade:

INGREDIENTS:
7 grapefruits
1 lemon
2.3 lb sugar
2 teaspoons of vanilla extract
**If you'd like, you can add a cinnamon stick or some clove...

DIRECTIONS:
1. Use a vegetable peeler to peel the orange part of the grapefruit peel. Do the same with the lemon.
2. Dice the peel and add it to a pot. Cover with water and bring to a boil. Boil the peel until soft about 20 minutes.
3. While the peel is cooking, work on removing the pulp from the pith. Add the pulp to a bowl and discard the pith (I give it to the goats). Do the same with the lemon.
4. Once the peel is soft, drain the water and add the peel to the bowl with the pulp. Weigh this bowl and write down the weight then add the fruit to a wide and shallow pan.
5. Place the bowl back on the scale and add half of the weight of the fruit in sugar. For me, the fruit weighed about 4.9 lb so I added about 2.3 lb of sugar. Add the sugar to the pot with the fruit.
6. Turn the heat to medium-high and bring the mixture to a boil while stirring frequently. Let boil about 7 minutes.
7. Lower the heat to medium (or a little below that), and cook while stirring frequently for about an hour and twenty minutes or until the marmalade reached your desired consistency.
8. Remove from the heat and add the vanilla. Stir it in well.
9. If you want to can this marmalade, heat water in the water bath canner, sanitize your jars and lids and bands, pack your jars, and process half a pint and pint-size jars for 10 minutes.
