Grapefruit Marmalade... With A Twist!

Citrus is in season, and I promised myself that I would make time in spite of my work schedule to jar up some Grapefruit Marmalade.  Only this time I added a twist!

Ingredients:
6 cups cooked fruit (includes chopped peel, 3 Tbsp lemon or lime juice, 1/8 tsp baking soda, 3 cups water or juice, 3 tsp calcium water), 1 - 1 1/2 cups honey OR 2 - 3 cups sugar, and 4 1/2 tsp Pomona’s Pectin
