1. Bring 5 gallons of water up to 155F, add your grain, adjust temperature to hold at 145F and allow it to mash for 90 minutes. After mashing is complete, do an iodine starch test to confirm full conversion.
2. Strain the wort off the grain, then Sparge, or Rinse the grain with a gallon or so of hot water to get all the residual sugar off the grain.
3. Cool the wort to 80F, and if necessary, add more water to get a total of 5 gallons, check the gravity with your hydrometer, then pitch the yeast and ferment. Fermentation may take a week or more. You’ll know it’s done when you get a hydrometer reading of 1.000 or until your gravity reading stabilizes for 3 days.
4. You can then conduct a stripping run, collecting all the low wines or “singlings”, then conduct a spirit run on the low wines, making cuts where appropriate. Blend and enjoy, or age it on wood.
