We look at The Michigan Beans Cookbook Pamphlet and make a savory soup full of goodness! I just love this little bean book but if you can't find it on Ebay, you're still in luck as the Michigan Bean Commission is still in existence and has a wonderful website full of great looking bean recipes. You can access the website here: michiganbean.com/ What you'll need: 1 c dry Kidney Beans 2 qts Water 3 Onions, sliced 2 cloves Garlic, minced 1/4 c Bacon Fat- I used vegan Butter 6 Potatoes, diced 2 Bay leaves 1 tsp ground Allspice 8 oz Tomato Paste Salt and Pepper to taste Place beans in the water and bring to a boil. Turn off heat and let stand 1 hour. Bring to a boil again and simmer, covered, about 1 1/2 hours. Watch water level as I needed to add some. Cook onions and garlic in bacon fat until lightly browned. Add with other ingredients except salt and pepper. Simmer, covered, another 1 1/2 hours. Season to taste. Cookbook used: The Michigan Bean by the Michigan Bean Commission date unknown
