Quick And Easy Zucchini Relish - Perfect For Canning Or Gifts!

This is our family's favorite
This is our family's favorite relish. A simple recipe with simple ingredients. Please do give it a try. I promise, it will become your favorite as well.
Recipe:
12 cups Grated Zucchini
4 cups Grated Onion
1 Finely Diced Red Pepper
1 Finely Diced Green Pepper
5 Tbsps. Canning Salt or Pink Himalayan Salt
2.5 Cups White Vinegar, 5% Acidity
4 Cups White Sugar
1/2 tsp. Black Pepper
1 tsp. Turmeric
1.5 tsp. Celery Seeds
3/4 tsp. Nutmeg
Place zucchini and onion in a large non-reactive bowl. Sprinkle with salt, cover and refrigerate overnight. The next day, rinse well and squeeze all of the liquid out of mixture.
In a pot add, red and green pepper, vinegar, sugar and spices. Mix well, add zucchini and onion mixture. Place on burner, bring to a boil, simmer for 30 mins and can.
This recipe is hot water bath for 30 mins for quarts and 25 minutes for pints.
