Easy And Delicious One-pan Chicken Quesadillas

Sheet Pan Chicken Quesadillas
6 - 7 Large Flour Tortillas
3 Chicken Breasts, thinly sliced
3 Tbsp. Taco Seasoning Mix (recipe below)
2 C. Corn
1 Large Onion, Sliced
3 Tbsp. Oil for cooking chicken and onions
3 c. Cheese, Grated (Sharp/Old Cheddar, Mozzarella)
Butter or oil for preparing the sheet pan and brushing on the quesadillas.
Bake at 425. Serve with guacamole, sour cream and salsa.
Other options:
Beef, shrimp, ground turkey, rotisserie chicken, pesto, peppers, jalapenos, cilantro, black beans, different cheeses, sweet potato, spinach, olives, avocado, tomatoes, zucchini, green onions. The options are truly endless. Try just cleaning out your refrigerator and making a quesadilla with whatever you that needs to be used up.
Large Batch of Taco Seasoning Mix
• ¼ c. chili powder
• 2 Tbsp. ground cumin
• 1 Tbsp. Tajin Spice Mix
• 1 Tbsp. salt
• 1 Tbsp. ground black pepper
• 2 Tsp. ground paprika
• 1 Tsp. garlic powder
• 1 Tsp. onion powder
• ½ Tsp. crushed red pepper flakes (feel free to use more if you like it spicy)
• 1 Tsp. dried oregano
