For today’s easy cookie recipe we are baking soft and fudgy peppermint brownie cookies!  With the perfect balance of rich chocolate and a hint of sweet peppermint, it’s no wonder these peppermint brownie cookies are such a hit at Christmas time! With a rich chocolate flavour, a soft fudgy center these chocolate cookies are a Christmas classic! These festive chocolate peppermint cookies can be made up to 2 months ahead of time and frozen.

Peppermint brownie cookies recipe:
Cookies ingredients:
1 cup all purpose flour 130g
1/2 cup cocoa powder 60g
3/4 teaspoon baking soda 3g
1/4 teaspoon fine sea salt 1g
1/2 cup softened salted butter 113g
1/2 cup granulated white sugar 100g
1/4 cup packed brown sugar 45g
1 large room temperature egg 50-60g
1/2 teaspoon peppermint extract 2g
1/2 cup semi sweet chocolate chips 90g

Cookie directions:
In a large bowl whisk together flour, cocoa, baking soda and salt. In a large bowl or bowl of your stand mixer cream butter and sugar on low for 2-3 minutes until everything is well incorporated. Add egg and peppermint and continue mixing on low for another 2 minutes or until the mixture is nice and pale and airy. Gradually add in dry ingredients mixing after each addition. Lastly, add chocolate chips and stir until incorporated. Chill dough for at least 2 hours, up to 3 days. If you chill for longer than 2 hours allow the dough to warm on the counter for 30 minutes before scooping. Preheat your oven to 350F/175C. Line your cookie sheets with parchment paper. Using a 1.5 tablespoon cookie scoop place cookie dough balls onto a the cookie sheets, leaving  room for spreading. Bake 8-10 minutes. The middles will seem underbaked, but this is how we want them! Allow to cool on the pan for 5 minutes and then move to a wire rack. This recipe will make approximately 20 cookies and these can also be frozen, freezing instructions can be found down below! Now we can make the icing!

Peppermint icing ingredients:
1/2 cup powdered sugar 50g
1-2 tablespoons water 15-30g
1/4 teaspoon peppermint extract 1g

Peppermint icing directions:
In a small bowl combine powdered sugar, 1 tablespoon of water and peppermint extract. Whisk until it is smooth, adding more water if need. Transfer to a piping bag or use a spoon to drizzle the icing over top of your cooled peppermint brownie cookies! These cookies are good at room  temperature for 3 days, or 5 days refrigerated.

Freezing instructions: *Do not freeze iced cookies, add icing before serving*

a. You can freeze your baked cookies in a freezer tight bag or container for up to 30 days. Allow to thaw for 1 hour.
b. Freeze your unbaked cookie dough balls. Place on a pan or plate and freeze for 30 minutes. Transfer to a freezer tight bag or container. These can be frozen for up to 3 months. Remove from the freezer 30 minutes before baking. Bake as indicated above and then prepare and top with peppermint icing.
