Chicken cutlet - Kerala style

Chicken cutlets are favorite snack item for keralites. These cutlets are delicious and are made with mashed potatoes and shredded chicken. (Click on 'Show More' below for detailed instructions)

Ingredients:
2 large potatoes;
1 large onion finely chopped;
3 tsp chopped ginger;
3 tsp chopped garlic;
Green chillies according to taste;
lots of curry leaves;
1/2 tsp turmeric powder;
1 tsp pepper powder(add 1/2 tsp while cooking the chicken & 1/2 tsp while sauteeing);
1/2 tsp garam masala powder;
Enough oil for sauteeing and frying;
Salt to taste;
1/2 tsp fennel powder;
2 eggs;
Breadcrumbs;
1 lb boneless chicken.


Cook the chicken by adding 1/2 tsp pepper powder, salt and enough water.
Once the chicken is cooked turn off the flame and keep it aside.
Shred the chicken to small pieces using your hand or use a food processor or blender to shred the chicken.

In a pressure cooker add the potatoes and enough water to cover the potatoes and pressure cook for 2 whistles( you can also cook the potatoes in a pot with enough water).
You can also cook the potatoes in a microwave by wrapping the potatoes with a sling wrap and microwave for 5 mins. ( time needed will vary based on microwave settings ).

Remove the potatoes and let it cool completely.( If the potatoes are mushy put them in the refrigerator for 1/2 hr).
Mash the potatoes and keep it aside.
In a pan add oil and when hot add the onions and saute till they softens.
Then add garlic, ginger, green chillies, curry leaves, and saute om medium flame for about 5 minutes.
Add the turmeric powder, 1/2 tsp pepper powder, garam masala powder, fennel powder, and saute for 2-3 minutes.
Add the shredded chicken and mix well.
Sprinkle salt and add the mashed potatoes.
Mix well and cook for few more minutes.
Remove from flame and once cool make patties with the cutlet mixture.
Beat the eggs and keep it aside.
Dip the patties in the beaten eggs and then roll it on the bread crumbs.
Pour enough oil in a deep bottom pan and add the patties.
Reduce the flame to medium and fry the patties by turning both sides.
Fry till golden brown.
Enjoy these cutlet with ketchup or chutney!
