Mung Beans Stir Fry/ Kerala Style Cherupayar Thoran

Healthy and tasty stir fry made with mung beans. Small red onions and coconut oil gives a unique flavor to this dish. Click on "show more" for detailed recipe.

Ingredients:
3/4 cup mung beans;
9-10 small red onions also called sambhar onions(you can use onions/shallots if small red onions are not available);
1 tsp chopped garlic;
1 tsp chopped ginger;
Green chillies to taste;
Few curry leaves;
5 tsp grated coconut;
1/2 tsp turmeric powder;
1/2 tsp cumin seeds;
1 tsp mustard seeds;
2 dried red chillies;
Few tsp coconut oil;
Salt

Rinse the mung beans and soak overnight in water.
In a pressure cooker add the mung beans and 1 cup of water(Add just enough water to cover the beans. Do not add too much water)
Pressure cook for 1 whistle.
Heat a pan or an earthen pot, and add coconut oil.
When oil gets hot add mustard seeds.
When mustard seeds starts to splutter, add dried red chillies, cumin seeds and saute for few seconds.
Add red onions, ginger, garlic, green chillies, curry leaves and cook until the onions are soft.
Add turmeric powder and cook for a minute.
Add the cooked mung beans and give a good mix.
Cook till it gets dry.
Add grated coconut and curry leaves.
Pack everything towards the center of the pan and reduce flame to low.
Cover and and cook for 2 more minutes.
Serve hot with rice, roti or as an accompaniment with kerala kanji!
