These delicately soft and deliciously bite sized French Madeleine sponge cakes are perfect match for cup of coffee or tea anytime of the day. Incredibly light, airy and soft in the middle but with a crispy edge.

You can prepare the batter in advance, keep in the fridge and you can retrieve anytime for a freshly baked Madeleine delights. If you don’t have a Madeleine pan, you can use a regular cupcake pan too! Give it a try and you definitely won’t regret!

➡️INGREDIENTS:
250g all purpose flour
250g butter unsalted, melted
185g granulated sugar
25g brown sugar
1/4 tsp salt
40g honey
5pcs large eggs
7g baking powder
1 tsp vanilla extract
Half Lemon zest
