German Potato Salad (10-12 People)

5lbs Idaho Potatoes boiled till soft (20 min?)

1.5lbs. Bacon cut into Bits then cooked. Pour out grease saving approx. two table spoons in pan which you will need for the dressing.

20 (or so) green onions chopped

1 extra small white onion for “good measure”

DRESSING:

2 Tbl spoons saved bacon grease
3 cups water
3 Tbl spoons flour
3/4 cup vinegar



4t sugar
2t salt
1t pepper

Peal potatoes after they are boiled and soft. Cut Lengthwise, then into quarter (25 cents) sized medallions, Place in bowl

Add Onions
Add Bacon saving a small amount of bacon for the top when finished

To make the dressing:
Heat bacon grease (2 Tbl) in same pan (Medium to low)
Mix flour and water in separate container mix vigorously.
Pour mixed flour/water into pan and add vinegar continuously mix.
Add salt, pepper and sugar.

* Dressing is a “Taste as you Go” thing, add more or less of an ingredient as you feel necessary

Bring to Near or slow boil. This may take 10 to 15 minutes. Watch for dressing to turn from cloudy to Clear-(ish)

Pour over Potatoes and gently mix with onions and bacon

Let stand one hour or so. Or chill till next day. It takes some time for Potatoes to absorb dressing.

Top with remaining bacon bits and Sliced Hard Boiled eggs for show!
