Recipe:

- 1/2 lb finely chopped jalapeño (de-seed)
- 1 lb finely chopped green bell pepper
- 1 & 1/4 cup apple cider vinegar
- 1/4 cup lemon juice
- 1 tsp kosher salt
- 6 cups sugar
- 3 oz liquid pectin

Add all ingredients BUT pectin to pot and bring to boil. Low boil for 10 minutes stirring frequently. Bring back to rolling boil and add pectin for 1 minute. Stir constantly! Ladle into 7 sterilized jelly jars, leaving 1/4" head space. Cover and process jars in boiling hot water bath for 10 minutes. Remove and let cool for 24 hours.
