Taiyaki - fish-shaped filled pancakes
1 egg
40 g sugar
200 ml milk
150 g all-purpose flour
1 t. baking powder
1 T. oil
1/2 C. store-bought anko (sweetened red bean paste)

Heat the taiyaki pan on med-low while preparing the batter.  In a bowl, slightly beat the egg, add the sugar and beat until light in color and the sugar is completely dissolved.  Slowly add the milk to the egg and sugar mixture until well incorporated.  Sift in the flour and baking powder to the milk/egg mixture, and mix well to ensure there are no lumps.  Finally mix in the oil.  Using a pastry brush, lightly oil the heated taiyaki pan.  Fill one side of the pan 1/2 full of batter, and add a heaping tablespoon of bean paste to the batter, lightly spreading it out.  Top the bean paste with an additional 1-2 T. of batter.  Lightly oil the other side of the pan and then coat with a light layer of batter before closing the pan.  Cook the taiyaki over medium heat,  opening the pan occasionally to gauge doneness.  The taiyaki is ready when it has a rich golden color.  Serve hot.
Makes 6-8 cakes.
