Apple Muffins with Crunchy Topping
These delicious muffins have just the right amount of spice and  will have everyone coming back for more!  Who doesn’t love the smell of apples and cinnamon filling the house?  

Makes 16-18 muffins

Ingredients:

2 ½ cups all purpose flour
1 tsp baking soda
1 ½  tsp cinnamon
¼ tsp salt
1 cup soy or oat milk, soured (1 cup soy milk +1 tbsp white vinegar)
1 ½ cup brown sugar
¼ cup apple sauce
1 ½ tsp vanilla
⅔ cup vegetable oil
2 cups apple, small dice (2-3 medium apples)

Topping Ingredients:

¼ cup vegan butter softened
½ cup brown sugar
⅓  cup all purpose flour
⅓ cup oats


Instructions:


Preheat oven to 350°F.

Dice apples and set aside.

To sour vegan milk,  add 1 tbsp white vinegar to soy or oat milk. Set aside.


Make topping in advance of muffin.  Mix vegan butter, brown sugar, flour and oats together until well combined. Set aside.
In a separate bowl, mix flour, baking soda, cinnamon and salt. Once thoroughly mixed. Add in diced apple and toss together. Set aside.

In a separate bowl, mix brown sugar, apple sauce, vanilla, vegetable oil and soured vegan milk. Set aside.

Mix the wet and dry ingredients until just combined.

Line muffin tray with muffin liners.  Fill muffin cup ¾ full and add topping to each muffin. Bake for 25-30 minutes.

Mix dry ingredients. Add apples to dry ingredient mix.

Mix wet ingredients.

Mix flour with apples & wet ingredients

Bake muffins



Apple sauce does double duty acting as a binding agent & and adds another layer of apple flavouring.

Adding apples to the dry mix first will prevent them from falling to the bottom.

Can dice or slice depending on what you prefer
