Vegan Liquid Mozzarella: The Perfect Pizza Topping (Finally!)

Liquid Vegan Mozzarella Cheese

This is Mike’s incredible recipe for a liquid vegan cheese for pizza or for a grilled cheese sandwich.  It tastes absolutely amazing!  I can’t wait to hear what you think and how you use it…

Ingredients:
1 cup water
⅓ cup raw cashews
2 tbsp vegetable oil
2 tbsp tapioca starch
¾ tsp salt
½ tsp konjac
1 tbsp sunflower lecithin
½ tsp lactic acid

Instructions:

Add water and cashews to a high speed blender and blend for 1 minute. (If you do not have a high speed blender, soak cashews overnight and then blend water and cashews.) Empty contents into a nut bag to strain out the pulp while allowing the liquid to drain into a bowl.

Clean out the blender.  Add the cashew milk from the bowl to the blender. Add vegetable oil, tapioca starch, salt, konjac, sunflower lecithin and lactic acid to the cashew milk in the blender.  Blend again.

Option 1:
You can pour this liquid "cheese" sauce directly on top of a pizza and bake in the oven.

Option 2:
In a bowl, fill with water & ice and set aside.

Pour liquid vegan cheese into a pan. Set temperature to medium high and stir constantly.  The liquid will thicken, become a bit stretchy and darken in colour.

Once the vegan cheese is thick enough, spoon and shape the vegan cheese into balls and drop into the ice water.  Once cheese has become solid you can use it as cheese.
