★ INGREDIENTS, DOSES AND PROCEDURE:

vermicelli 400 g
Burrata 300 g
Dried tomatoes 100 g
Salt to taste.
for the pesto
rocket 100 g
pine nuts 10 g
1 clove garlic
Pecorino romano 30 g
Ice 2 cubes
extra virgin olive oil 100 ml
Salt to taste.

Put the rocket, pine nuts, garlic, pecorino cheese, ice cubes and a pinch of salt in a container for the hand blender, add the oil and blend everything with an immersion blender. storage liquid and cut into strips. Boil the pasta in abundant boiling salted water, drain it in a bowl, stir and let it cool for a few minutes. Add the rocket pesto and add it to the pasta, soften everything with a little cooking water, then add the dried tomatoes and finally 150 g of burrata. Mix everything by adding a little more pasta cooking water if necessary. Serve the pasta and complete with the remaining burrata by adding it to the individual dishes.
