Single Serving Strawberry Shortcake for One (or Two)

A sweet buttermilk biscuit topped
A sweet buttermilk biscuit topped with fresh strawberries and whipped cream is the perfect strawberry shortcake and the perfect amount for two people. You can make one big shortcake or two smaller ones and share.
Recipe:
1 cup all purpose flour
1/4 cup salted butter, chilled
1 1/2 Tbsp brown sugar
1 Tbsp granulated sugar
1/4 tsp salt
1 tsp baking powder
1/3 cup heavy whipping cream
1 1/2 tsp sugar
vanilla, few drops
1 Tbsp additional cream for brushing shortcake with
coarse sugar for sprinkling on top.
1 cup strawberries, sliced
Cut chilled butter into small pieces. Mix together dry ingredients in a bowl and add in butter. Use a pastry cutter or our fingers to blend in butter. It will look like very small pebbles.
Add in 1/3 cup of whipping cream. Mix until the dry ingredients are absorbed. You may need to use your. hand to bring the ingredients together.
For a circle of a square and place on a parchment lined baking sheet.
Brush with some additional cream, sprinkle with raw coarse sugar and bake at 350 degrees F for 12-13 minutes or until golden brown (time will vary depending on if you make one shortcake or two.)
Make whipped cream. Whip 1/4 cream cream , adding in 1 1/2 tsp sugar and a few drops of vanilla.
Slice strawberries.
Cut shortcake in half. Add a layer of whipped cream and strawberries. Top with other half of shortcake and add additional whipped cream and strawberrie.
Enjoy!
