I love my Armenian heritage, and being from Iran, I grew up incorporaating Persian traditions with my Armenian customs.  Jan 5th is the eve of Armenian Christmas, called "Jurorhnek", during which Armenians celebrate the epiphany of Jesus Christ, and his baptism.  

In our tradition, one of the foods we prepare for his holiday is called "KooKoo", which is a Persian dish, and can be described as a delicious fragrant herb frittata.  This is an awesome dish:  it's full of fiber from the herbs, protein from the eggs, and anti-inflammatory factors from the turmeric.  You can make this dish year-round, which I do for my family.  Enjoy!

What you will need:

- 2 bunches fresh cilantro
- 2 bunches fresh parsley
- 1 bunch leeks ("tareh" in Iranian)
- 1 bunch baby spinach
- 1/2 head of lettuce
- 5 gloves freshly peel garlic
- 8 eggs
- 3 tsp flour
- salt and pepper to taste (about 1 tsp of each is recommended)

TIPS:  

- Remember to let one side of KooKoo turn golden brown before flipping
- When Adding the herb mixture to the hot pan, drain out the water (or else frittata will be too soggy)
