This Aloo Gobi ki sabji is from the Dhaba Task from my MasterChef Journey! I had cooked this Aloo Gobi recipe as a part of the food we were cooking for 50 truck drivers at a Dhaba. And the Aloo Gobi recipe won us great appreciation from Akshay Kumar!
The trick to making this Aloo Gobi ki sabji is in frying the potatoes and cauliflower before adding them to the masala. This gives the Aloo Gobi it’s texture and taste too!

Aloo Gobi
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
4 large potatoes
1 large cauliflower
2 onions, sliced
2 tomatoes, sliced
1 tsp cumin seeds
1 tsp Kasuri methi
1 tbsp ginger green chili paste
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala powder
Coriander leaves
Oil as required
Salt to taste

Method:
Peel the potatoes and cut into long pieces. Cut the cauliflower into florets.
Heat 2” oil in a pan. fry the potatoes in medium hot oil in batches. Remove when golden.
Fry the gobi florets and remove.
Heat 3 tbs oil in a pan. add the cumin seeds and then the sliced onions. Sauté till lightly colored. Add the ginger green chili paste and sauté till fragrant. Add the powdered spices, salt to taste, followed by the tomatoes and cook for 2 minutes. Add the fried potatoes and cauliflower and toss well. Add crushed kasuri methi and mix. Top with chopped coriander leaves and serve.
