Why don’t we celebrate everyday home food? Let’s do just that with my Aloo baingan ki sabzi! Aloo baingan, or potato brinjal is a combination enjoyed all over the country. While some make Aloo Baingan with onions & tomatoes, others make it without it, some use the large round brinjals to make Aloo Baingan, some, like I do, use the small brinjals.
I add a very special ingredient to make my Aloo Baingan that adds all the flavour to it. My special ingredient is the Punjabi wadi!

Recipe :

Aloo Baingan
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3-4

Ingredients:
8 small potatoes
8 small brinjal
1 large onions
2 medium tomatoes
2 tbsp mustard oil
1 tsp fenugreek seeds
3 Punjabi masala wadi
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
2” ginger
3-4 green chilies
Coriander leaves
Salt to taste
¼ tsp asafetida

Method:
Peel and cut the potatoes into 6 pieces. Cut the brinjal into 6 long pieces. Soak in water.
Finely slice the onions and tomatoes.
Coarsely crush the ginger and green chilies.
Heat 2 tbsp mustard oil.
Add the drained potatoes with 1 tsp salt and cook till the potatoes are golden and half cooked. Remove and set aside.
To the same oil, add the fenugreek seeds and the asafetida. Add the ginger green chili paste and mix well.
Add the sliced onions and sauté till golden. Add the brinjal and cook till the brinjal is half cooked. Add the powdered spices, potatoes, tomatoes and mix well. Add 2 tbsp water and mix. Cover and cook till the potatoes are well cooked. Crush the Punjabi wadi to a coarse powder. Add over the potatoes and mix well. Cover and cook for 2 minutes.
Mix well and add chopped coriander. Mix well and serve.
