Recipe :

Aloo Shimla Mirch
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
4 medium potatoes
3 capsicum
2 onions
2 large tomatoes
2-3 Green chilies
1” Ginger
1 tsp Kasuri methi
1 tbsp Coriander seeds
1 tsp pepper corns
1 black cardamom
1 tsp cumin seeds
Salt
1 tsp Turmeric powder
1 ½ tsp Red chili powder
1 tbsp Coriander powder

Method:
Peel and cut the potatoes into cubes. Cut capsicum also in similar size.
Finely chop the onion. Puree the tomatoes. Crush the ginger garlic to make a coarse paste.
Heat 1 tbsp oil in a non-stick pan. Add the potatoes, 1 tsp salt and toss till the potatoes are crisp and 80% cooked.
Remove the potatoes, in the same pan, toss the capsicum till crisp and lightly coloured. Remove. Add 2 tbsp oil. When the oil is hot, add th cumin seeds and allow to splutter. Add the chopped onions till nicely golden. Add the ground ginger chilies, powdered spices and mix well. Now add the tomato puree and mix well till the oil floats on surface. Add the potatoes and mix well. Cook for a few minutes. Add the capsicum and mix well. Cover and cook for a few minutes. Add kasuri methi, mix remove from fore and serve.
