The name 'tahchin' translates to "upside down" in Farsi, referring to its unique presentation where the golden crust faces upward upon serving. It's often enjoyed during special occasions like Nowruz (Persian New Year).

Ingredients:
Rice: ½ cup
Chicken breast: 100 grams
Eggs: 1
Yogurt: 40 grams
Olive oil: 20 grams
Salt: ½ teaspoon
Pepper: ⅓ teaspoon
Garlic powder: ¼ teaspoon
Saffron (steeped): 2 tablespoons
Barberries for garnish

Instructions:
Soak the rice in water with salt for half an hour. Boil water with salt in a pot, add the rice, cook until slightly tender, then drain.
In a bowl, mix the egg yolk with olive oil, yogurt, spices, and steeped saffron.
Combine the drained rice with the saffron mixture.
Refrigerate for one to two hours.
Grease a mold with butter and pour the rice into it as seen in the video.
Add cooked and shredded chicken breast and barberries.
Top with more rice.
Bake in an oven at 250 degrees for 30 minutes.
Allow it to cool slightly after baking, then remove from the mold, garnish with sautéed barberries, and serve.

Tips:
 For a more flavorful cake, you can add a few tablespoons of rose water or orange blossom water to the egg mixture.
 You can also add other toppings to your cake, such as pistachios, almonds, or raisins.
 To make a vegetarian cake, simply omit the chicken breast and add more vegetables, such as carrots, peas, or mushrooms.
The saffron threads should be soaked in hot water for at least 30 minutes before using.
 The chicken can be cooked in any way you like. I like to poach it in chicken broth with some herbs and spices.
 The barberries can be soaked in hot water for 30 minutes before using, but this is not necessary.
 The cake can be served warm or cold.
