You’ll never want plain corn again after you’ve experienced  ELOTE, or Mexican Street Corn!  Simple ingredients slathered on grilled corn turn into an explosion of YUM!!  We make this backyard BBQ staple often during grilling season.  Make extra - because everyone is going to want MORE!!

RECIPE:

4 Ears of Fresh Corn with the husks
One Cojita Cheese shredded (crumpled)
1/4  Cup Mayonnaise
1/4  Cup Sour Cream
1 tsp. Chili Powder
1/2 tsp Cayenne Pepper
1/2  Cup Finely Chopped Cilantro
Kosher Salt
Lime Wedges

Directions:

Pell back husks on corn and tie with butcher’s twine.  Remove silk.
Grate Cojita cheese and put on wide plate or platter.
In small bowl combine Mayonnaise, Sour Cream, Chili Powder and Cayenne.
Mix and set aside.
Wrap foil tightly around husks down to base of corn.
When grill is hot, grill corn 10-20 mins until desired char is achieved.
Take off heat and immediately coat with Mayo mixture.
Roll and coat with Cojita cheese.
Sprinkle with cayenne, salt and cilantro.
Squeeze lime over the top, and serve with lime wedges.
