Turn Giant Farmer’s Market Onions into a mouth watering side dish or snack!  My recipe for these onion rings could be the crispiest, tastiest onion rings you’ve ever had!

Ingredients:

One Large Onion
2 Pints Buttermilk
2 1/2 Cups All Purpose Flour
1 1/2 tsp Cayenne Pepper
1 1/2 tsp Black Pepper
2 tsp. Garlic Powder
1/2 Cup  Cornstarch
Salt ( to taste on rings out of fryer)
2 eggs
Panko Bread Crumbs
Peanut Oil

Directions:

Cut onion on bias into approx. 1/4 inch slices.
Separate rings from slices down to whatever size you like.
Pour buttermilk into large bowl.
Place onion rings in buttermilk to soak an hour in fridge.
Combine flour, cayenne pepper, garlic powder and cornstarch in shallow tray or bowl.
Whisk to combine the dry ingredients.
Cover large baking sheet with foil (for easy clean-up) and place a rack on top of foil.
Pull onion rings from buttermilk and place in a bowl.
Dredge onion rings in flour mixture, and tap off extra flour.
Then place floured rings on rack.
Complete all rings.
Pour remaining flour mixture into bowl and combine with 2 1/2 Cups buttermilk from where the onions were soaking, along with 2 beaten eggs.
Stir until smooth.
If too thick, add additional buttermilk until a light pancake batter consistency.
Pour panko crumbs into shallow dish.
Set up another baking pan lined with foil and rack on top.
Working one at a time, drop floured ring into batter, then tap off extra.
Dredge in panko crumbs, tap off extra and set on rack.
Repeat until all rings are pankoed.
Heat oil to 350 degrees F.
While oil is heating, let pankoed rings “dry” (part of secret for super crispy, crunchy rings!)
Once oil has reached temp., drop rings into hot oil. Don’t crowd. Turn a few times, remove and salt to taste!
Let cool to warm on rack.
