⭐配方内的吉利丁粉是無味的,如果使用吉利丁片,可以用同等的份量。
⭐餅乾底做好后可以選擇用160℃/320℉烤10分鐘,也可以不烤,直接放入冰箱。
⭐在烘烤之前必须预热烤箱达到设定温度。
⭐因為每个烤箱都有所不同,在配方裏的烘烤温度和时间仅作参考。
⭐蛋糕脫模只需要用熱毛巾敷大約20秒即可,如果需要看詳細的脫模方法,也可以觀看我的視頻“草莓慕斯蛋糕”。
⭐請用80℃以上的熱水浸泡刀,擦乾后再切,每一刀重複這個步驟,就能切出完美的芝士蛋糕。
⭐蛋糕完成后可在冰箱存放5天。

⭐ The gelatin powder is unflavored, if you use gelatin tablets, you can use the same amount.
⭐ After the biscuit base is ready, you can choose to bake it at 160℃/320℉ for 10 minutes or leave it in the refrigerator without baking.
⭐The oven must be preheated to reach the set temperature before baking.
⭐Because each oven is different, the baking temperature and time in the recipe are for reference only.

⭐Please soak the knife with hot water above 80℃, dry it and then cut it. Repeat this step for every time to cut out the perfect cheesecake.
⭐ After the cake is finished, it can be stored in the refrigerator for 5 days.

蛋糕底:
100g 餅乾
50g融化的無鹽牛油

藍莓泥:
500g新鮮藍莓
50g糖
1湯匙檸檬汁

藍莓檸檬汁:
10g藍莓汁
1/2湯匙檸檬汁

芝士糊:
400g 奶油芝士(室溫)
90g糖
100g酸奶油(室溫)
50g原味酸奶(室溫)

藍莓芝士層:
450g芝士糊
250g 35%淡奶油
40g牛奶
8g吉利丁粉
160g藍莓泥

藍莓啫喱層:
300g藍莓泥
70g涼水
10g吉利丁粉

原味芝士層:
餘下的芝士糊
100g 35%淡奶油
20g牛奶
4g吉利丁粉

頂層啫喱:
300g涼水
60g糖
10g吉利丁粉
2tsps藍莓檸檬汁
新鮮藍莓

Recipe:(8inch X 3inch round mousse ring)
Base:
100g biscuit
50g melted unsalted butter

Blueberry puree:
500g fresh blueberries
50g sugar
1tbsp lemon juice

Blueberry and lemon juice mixed liquor:
10g blueberry juice
1/2 tbsp lemon juice

Cheese paste:
400g cream cheese(room temperature)
90g sugar
100g sour cream(room temperature)
50g plain yogurt(room temperature)

Blueberry cheese layer:
450g cheese paste
250g 35% whipping cream
40g milk
8g gelatin powder
160g blueberry puree

Blueberry jelly:
300g blueberry puree
70g cool water
10g gelatin powder

Plain cheese layer:
remaining cheese paste
100g 35% whipping cream
20g milk
4g gelatin powder

Topping jelly:
300g cool water
60g sugar
10g gelatin powder
2tsps blueberry and lemon juice mixed liquor
Fresh blueberries
