Making Violet and Dandelion Jelly

Join me (and some of my kids) as we harvest dandelions and violets and turn them into jelly!  

Here's the recipe I used:
Ingredients-
2-4 cups of flowers
2 cups of water
2 cups of sugar
1/8 cup of lemon juice
1/2 package of pectin

Directions-
Harvest 2-4 cups of flowers.
Rinse the flowers and put them into a quart sized mason jar.
Pour 2 cups of boiling water over the flowers.
Let them steep for 24 hours, making tea.
Strain the tea into a medium to large sized pot.
Stir in lemon juice.
Stir in pectin and bring to rolling boil, stirring constantly.
Stir in sugar.
Bring back to rolling boil, then stir for 1 minute.
Turn off heat.
(Optional: Perform freezer test to see if the jelly has set)
Fill jelly jars leaving 1/4 inch headspace.
Wipe clean the jar rims.
Place canning lids and rings on the jars.
Place jars in water bath canner and process for 10 minutes.
Remove the jars and let them set overnight (12 hours).
