This eggless lemon loaf cake is super spongy and moist lemony cake with an easy lemon glaze.
It has a tangy flavour as this batter is made with freshly grated lemon zest and fresh lemon juice. It’s a perfect tea time treat!

Preparation time: 15 minutes
Cooking time: 35 minutes
Serves: 10-12

Ingredients:
1. Butter                    70gm or 1/2 cup
2. Caster sugar        90gm or 1/2 cup + 1 tbsp
3. All purpose flour  175gm or 1+3/4 cup
4. Yogurt                    1+1/4 cup
5. Baking powder     2 tsp
6. Baking soda         1 tsp
7. Lemon juice          3 tbsp
8. Lemon zest of 1 lemon

Lemon glaze:
9. Caster sugar       3 tbsp
10. Lemon juice      3 tbsp

Method:
• Pre-heat oven at 375’F or 190’C for 10 minutes.
• Sieve together all purpose flour, baking powder and baking soda and keep it aside.
• Add 3 tbsp lemon juice to yogurt and keep it aside.
• In a separate bowl, beat butter and sugar until light and creamy.
• Add lemon zest to butter mixture and give it a good mix.
• Next, add dry ingredients alternately with yogurt mixture to the butter mixture. Do not over mix.
• Once combined, immediately pour the batter in a 8”x4” loaf mould.
• Tap it few times to remove any air bubbles.
• Bake it at 375’F or 190’C for 30 minutes or until toothpick inserted comes out clean.
• Meanwhile, prepare the lemon glaze by heating sugar and lemon juice on low heat, keep stirring continuously until sugar dissolves.
• Let the cake cool in the mould for 10-15 minutes and then unmould it.
• Make holes all over the cake by using a toothpick/fork.
• Pour the prepared lemon syrup on top of the cake.
• Let the cake sit uncovered for 2 hours before cutting.
• Keep it refrigerated in an airtight container.
