Kesari recipes

Ingredients:

Rava- 1 cup
Sugar- 1 cup
Ghee- 50 ml
Refined Oil- 50 ml
Mango Pulp- 1 cup
Salt- 1 Pinch
Cashews & Raisins
Cardamom powder-1/4 tsp

Preparation:

In a heated Pan, add 2 tsp ghee & roast the 10-12 cashew buts till it turns golden brown.

Add raisins & roast slightly till it bulge. Move it another plate or bowl.

In the same pan, add 1 cup rava & roast it well. Maintain low flame throughout.

Once rava is roasted crisply & aroma starts coming out of it, move it to another plate.

In a Pan add 2.5 cup water,add 50 ml refined oil & 1 tsp ghee,1 pinch salt & boil it.

Once the water started rolling boil stage add the roasted rava & mix it well without taking hand out.

Once it started getting dry, close the lid & boil it for 3 mins under low flame.

Add 1 cup sugar & mix it well. Add 1 cup grinded mango Pulp to this & mix it well.

I have used ready made mango Pulp, if you are using fresh mango make sure it got good sweet taste.

Add 1 more tsp ghee & mix it well. No need to add any essence or flavor.Just add 1/4 tsp cardamom powder.

Add the rest of the ghee & mix it well. Maintain medium flame throughout.

After adding sugar it takes only 3 to 4 minutes to complete the keasri cooking.

Add the fried cashews & raisins to this & mix it well & switch off the flame.

As we have added oil & ghee it wont dry even after several hours.
