This time I made red velvet with milk and without soda. It turned out very tasty, the sponge cake was airier, a lighter version of the classic red velvet made with kefir. It turned out very tasty with the strawberry layer! The dessert was moist, juicy and had a subtle strawberry flavor.

For the biscuit:⠀⠀
- 145 flour;⠀⠀
- 130g sugar;⠀⠀
- 30g sunflower oil;⠀⠀
- 30g soft butter;⠀⠀
- 130g milk;
- 1 egg;⠀⠀
- 1/2 tbsp cocoa (without a slide);⠀⠀
- 1/2 tsp red dry dye (1 tsp liquid);⠀⠀
- 1 tsp baking powder.⠀⠀
- 1/5 tsp salt.

For the strawberry layer:
- 350g strawberries;
- 60g sugar;
- 1 tsp corn starch.

For cream:⠀⠀
- 300g creamy curd cheese (creamcheese, Philadelphia);⠀⠀
- 250 ml cream (33-35%);⠀⠀
- 70g powdered sugar.⠀⠀

BISCUIT
1. Mix flour, sugar, cocoa, baking powder, soda, and salt. Mix milk with dye. Add 1 egg, sunflower oil, soft butter and milk mixed with dye. Stir the whole mass until smooth.⠀
2. Bake the sponge cake on a baking sheet, be sure to lay parchment on the bottom. Bake at 180°C for about 12-15 minutes, until a toothpick is dry, be sure to check! It should come out dry from the biscuit.⠀⠀
3. The finished biscuit must cool, then grind the biscuit to crumbs in a blender or with your hands.⠀⠀

STRAWBERRY LAYER
1. Mix strawberries with sugar and grind with an immersion blender until pureed. Add starch and stir. Strawberries need to be boiled in a saucepan.
2. Place the saucepan on the fire and bring to a boil. Then cook the strawberries over medium heat for about 2-3 minutes, stirring the mixture constantly. Remove from heat and cool. You can transfer the strawberry puree into a pastry bag for easy assembly of the dessert.

CREAM
4. All ingredients must be cold before beating. In a bowl, combine cream cheese (cream curd cheese), cream, powdered sugar and beat until thick. Transfer the cream into a pastry bag. ⠀⠀
5. In a glass, assemble the dessert: sponge cake - cream - strawberry layer - sponge cake - cream - strawberry layer - cream and decor. Of course, you can collect them in any order, as you wish. Let the dessert cool and soak a little, about 3-4 hours in the refrigerator, so that it becomes tasty, soaked and stabilized. All is ready! Bon appetit!
