I really love the bread recipes that provide a quick bread without kneading. This recipe uses fresh yeast: today, we're baking a walnut bread with sweet potato. It's a fast dough without grains, made quickly. And it's what we call a no-knead bread.

Ingredients:
450 g White Spelt Flour
200 g Sweet Potato, grated
280 g Water
3 g dry yeast
1 Packet Liquid Sourdough (75 g)
1 Pinch of Sugar
30 g Oil
2 Teaspoons Salt
100 g Walnut Halves
Instructions:
In a mixing bowl, combine flour, water, yeast, sourdough, sugar, oil, and salt, and knead the dough for 2 minutes.
Add walnuts and grated sweet potato, and knead the dough for an additional 1 minute. Transfer the dough to a prepared loaf pan and cover it.
Let it rise in a warm place for at least 2 hours or until it has doubled in size. Towards the end of this time, preheat the oven to 392°F.
Bake for 45 minutes at 392°F with the lid on, then remove the lid and bake for an additional 10-15 minutes at 392°F until done.
Remove the bread from the pan and let it cool on a wire rack."
