Easy Homemade Lemon Marmalade

4 lemons (double or triple the recipe if you want more)
2 and 3/4 cups water
1 and 1/2 cups of sugar

Zest the lemons with a potato peeler (no white part as shown). Slice in thin strips and put in the pot. Add the sugar and water. Half the lemons and put just the juice of the lemons in the pot.  Bring to a boil and make sure the sugar is dissolved.

Reserve the lemon shells and put them into a mesh bag or cheesecloth. As shown in my video, add it to the pot and cook until very tender. Remove and squeeze out the juice when cooled. Continue to cook until the temperature reaches 220℉. Another way is to drop a small drop on a cold saucer and if it holds its shape when tilted, it is ready.

With the small batch you will not have to sterilize the jars because it will be done in a few days. However, I did show you how to do it if you chose to go that route and make a bigger batch.  

This is an amazing recipe and I highly recommend you try it! You will be happy with it for sure! I found out that the best is in strips as it looks amazing and also has a great taste!
