Cherry tart
Dough Ingredients:
180 grams of butter
270 grams of flour
3 egg yolks
60 grams of powdered sugar

Cream ingredients:
180 grams of milk
90 grams of cream
45 grams of sugar
2 egg yolks
25 grams of corn starch
60 grams of butter
A teaspoon of vanilla
160 grams of pastry cream
Cherry dessert ingredients:
560 grams of cherries
80 grams of sugar
4 teaspoons of gelatin powder
60 grams of cold water
Half a teaspoon of lemon juice
How to make cherry dessert:
Pour gelatin powder on cold water and melt it with indirect heat.
Take the core of the cherries and puree them with a blender. Put it in a container, add sugar and lemon juice and put it on heat until it thickens a little. When the cherry liquid has thickened, add the melted gelatin to it.
Put a nylon in a 24 cm mold and pour the dessert ingredients into the mold and put it in the freezer for 24 hours until it freezes.
How to prepare tart dough:
Pour cold flour and butter into a bowl and massage with your fingertips until it becomes breadcrumbs. Add egg yolk, powdered sugar and vanilla and mix. Add water gradually until the dough comes together (you may not use all the water).After an hour, remove the dough from the refrigerator and open it to the diameter of the mold and place it in the mold and fix it completely.

Pierce the surface of the tart with a fork and place an oil paper on it and pour some beans on it to make it heavy (this is to prevent the tart dough from puffing up in the oven).
Then put the dough in a preheated oven at 170 degrees Celsius for 35 minutes to cook.
After baking, remove the mold from the oven and let it cool, then remove the tart from the mold and place the cherry dessert on it, pipe the cream on it and serve.
How to prepare cream tart:
Pour milk and cream into a container and mix together and put on heat until they become uniform.
After gathering the dough, put it in nylon and put it in the refrigerator for an hour.Pour the egg yolk, sugar, vanilla and cornstarch into a container and mix together, add the milk and cream mixture and mix.
Pass the ingredients through a sieve and put them in a container and heat until it thickens.
After the cream thickens, remove it from the heat and add the butter to it and cover it with nylon until it cools.
Beat the pastry cream with an electric mixer until it forms completely, then add the cooled cream and mix well until it is smooth and pipe on the tart.
