Betty's husband, Rick, makes Sonoran-style
Betty's husband, Rick, makes Sonoran-style hot dogs.
Wrap each of your all-beef dogs with a slice of bacon (mesquite flavor if you can find it) in a spiral . Fry them in a skillet over medium-high heat, rolling the dogs to get all sides of the bacon done. When the bacon is done, the dogs will be properly heated.
Slice your bolillo rolls down the top and rest them over the dogs the last minute or two of frying time to warm them. Place a dog in each roll. Apply whichever of the following ingredients that spins your spurs:
refried beans (strongly recommended that you follow the method in Betty's Semi-Homemade Refried Beans recipe located here: Betty's Semi-Homemade Refried Beans) Note--some folks like plain, warmed pinto beans in lieu of refried.
mayonnaise blend (1/2 cup mayo + 2 tablespoons lemon juice + 1 tablespoon hot sauce)
chopped onions
chopped tomatoes
pickled jalapeno slices
cucumber slices (I used some semi-pickled ones that were available)
Monterey Jack cheese
I didn't use that following, but many do:
salsa verde
pico de gallo
guacamole
avocado slices
Some people even use (shudder) ketchup.
These pack a big serving of food for each dog if you apply the condiments like I do, so you might want to scale back the number planned for each diner compared to, say, the New York dog.
