Sharing with you today the recipe of a Bhalla Papdi Chaat.
Bhalla Papdi Chaat is a famous street food from Delhi.
Is a combination of dahi Bhalla and papdi chaat so get to enjoy the flavours of two in one plate!
The Bhalla Papdi Chaat plate has a base of crumbled dahi Bhalla which is then topped with papdi dipped in sweet chutney, it is then tipped with various chutneys and servrd.
I have shared with you the recipes of making cotton by soft dahi Bhalla, crispy papdi, sweet chutney, green chutney, and the secret behind the thick sweetened yoghurt.

Recipe;
Bhalla Papdi Chaat
Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 7-8

Ingredients:
For the Bhalla:
1 cup white urad dal
½ cup yellow moong dal
½ tsp salt
2 tbdp raisins
2 tbsp chironji

For the papdi:
2 cup flour
½ tsp ajwain
4 tbsp ghee
1 tsp salt

For sweet chutney:
1 cup tamarind paste
1 cup jaggery
1 tbsp oil
1 tsp fennel seeds
½ tsp nigella seeds
Salt to tsaste
1 tsp red chii powder

For green chutney:
1 bunch coriander
7-8 green chilies
2 tbsp lemon juice
2” ginger
Salt to taste
2 tbsp roasted chana

For curds:
2 cup yoghurt
1 tsp salt
4 tbsp sugar

For Garnish:
Chat masala
Coriander leaves
Ginger juliennes
Pomegranate seeds

Method:
For Bhalle:
Wash the dals well & soak them separately for up to 7-8 hours.
Drain the water, and grind the dals separately using little water to make a fine paste.
Mix the 2 dals, add salt and whisk the dals for 7-8 minutes until the batter is light and fluffy.
To check if the mixture is ready, drop a spoonful in a bol of water, it should float on top.
Heat 2” oil in a kadhai until its moderately hot.
Dip your hands in water & scoop out some batter then drop it carefully in the oil, then immediately splash the bhallas with hot oil so that they puff up nicely.
Fry over medium heat until light golden brown, once they turn light golden brown remove them from the hot oil & then immediately transfer them into a large bowl of water. Soak them in water till ready to be used.

For Papdi:
Rub in the salt, ajwain, ghee into the flour.
Adding little water at a time.
Start collecting the dough together. Do not knead the dough.
Break the dough into small balls. Roll out each ball into a small papadi.
Prick with a fork. Immediately fry the Papadis in medium hot oil.
Remove when golden. Allow to cool down completely.

For Sweet chutney:
Heat oil in a pan. Add the fennel seeds and Nigella seeds. As they splutter. At the tamarind based and the jaggery. Bring to a boil and simmer for 7 to 8 minutes. Season with salt and red chilli powder. Cool and store.

For Green chutney:
Grind together all the ingredients with 2 tablespoons water and salt to taste. Make a fine paste. And store.

For the Sweet Yoghurt:
Pass the yogurt through a sieve. Add in the salt and sugar. Mix well. Till the sugar is dissolved. Chill to serve.

To serve:
Squeeze out 2-3 Bhalla's from the water and break onto a plate.
Top with 4-5 papdi dipped in sweet chutney. Top the pappi with sweet yoghurt, green chutney, Sweet chutney, Chat masala, pomegranate seeds fine sev, coriander leaves, ginger juliennes and serve.
