[Ingredients / 1--2 servings]
・Eggplant : 250-300g
・Scallions / Green onion  : 50g (Finely chop)

[Youlinji Sauce]
・Finely chopped scallions / Finely chopped green onion
・Soy sauce : 36g
・Vinegar : 30g
・Grated ginger : 4g
・Grated garlic : 4g
・Sugar : 15g
・Sesame oil : 6g

*I use unsweetened soy sauce.
Generally in Japan, we use unsweetened soy sauce to make dishes.

This sauce is the so-called "yurinchi / youlinji sauce".
*Yurinchi / Youlinji Sauce = Chinese style deep fried chicken / Chinese deep-fried chicken Sauce.
This recipe uses eggplant instead of fried chicken.
It is also a delicious sauce for fried shrimp, fried fish.

今回は、プロが作る「茄子の油淋鶏」の簡単な作り方を紹介します。  
[材料 / レシピ 1-2人前]
・茄子 : 250-300g
・長ネギ : 50g (みじん切りにします)

[油淋鶏ソース]
・みじん切り長ネギ
・醤油 : 36g
・酢 : 30g
・おろし生姜 : 4g
・おろしニンニク : 4g
・砂糖 : 15g
・ごま油 : 6g

このレシピのソースはいわゆる油淋鶏のソースです。
サクサクに揚げた鶏肉に代用として茄子を使いました。
揚げたエビ、揚げた魚にもおいしいソースです。
