Perad also know as guava cheese is a goan sweet prepared specially during christmas in Goa.Perad is also known as Goiaba in portuguese.It is chewy and melt in mouth type fudge.It is prepared with guava pulp,sugar,lime and butter.
Detailed recipe of how to make Perad--guava cheese

Ingredients:

1 +1/3 cup guava pulp
1 + 1/3 cup sugar
1 lime juice
1/2 tsp butter
edible colour

Method:
1)Boil the guava in pressure cooker
2)once cool ,blend to smooth paste
3)sieve the mixture
4)measure the guava pulp to correct measurement.
5)in a vessel add measured cup of guava pulp with equal measure of sugar
example 1 cup guava pulp and 1 cup sugar
Note :guava pulp depends on how many guavas are used.
6)keep stirring
7)add 1/2 tsp butter and 1 lime juice and keep stirring
8)once the mixture comes to boil add rose pink colour or any edible
colour of your choice
9)keep stirring till mixture leaves sides
10)to check if mixture is ready,drop mixture into cold water and allow to
cool
11)once cool the mixture should be able to come together
12)stir and turn off
13)transfer the mixture to cake tin or plate greased with butter
14)Allow the mixture to cool
15)once mixture is cool ,cut into pieces of your choice
16)store perad in air tight container for 2 weeks
