Easy Goan prawns rissois/rissois de camarao recipe.Goan prawns rissois also known as Rissóis de Camarão(Prawns patties) in Portuguese,it is mouthwatering cheesy melt in mouth snack/appetizer which is served at wedding,parties in Goa.Rissois can be made in large batches and frozen and deep fried whenever required.So here is detailed recipe of how to prepare goan style cheesy creamy prawns rissois /rissois de camarao.

Ingredients:-
For filling:

14-15 prawns
1 onion
6 garlic cloves
1 tbsp oil
1.5 tsp butter
salt

For sauce
2tbsp butter
2tb maida/all purpose flour
3/4 cup milk
1/4 tsp pepper powder
2 tbsp cheese

for outer cover:
1 cup water
1 cup maida/all purpose flour
salt
1.5 tsp butter

For coating
semolina/rava+bread crumbs(1/4 cup each)
egg
2tb water

oil for frying

This recipe yields 24 rissois/rissoles.

Note:1)For outer crust you can use milk instead of water
2)Since i have used salted butter ,i have not added more salt in the sauce,you can check salt and add according to your requirement.

Procedure:
For filling:-
1)Take cleaned and washed prawns
2)cut into small pieces , add salt and rest for 10 mins
3)heat pan,add the prawns and cook for 2-3 mins or until they turn to slight pinkish colour and dry
4)once the prawns are cooked remove them into a plate/bowl and keep aside
5)In the same pan ,add oil and butter
6)Add finely chopped garlic and saute well  for 30-40secs
7)Add finely chopped onion and saute till translucent
8)Add cooked prawns
09)mix well and saute for 1min ,turn off flame and keep aside
10)For sauce,heat a pan add 2tbsp butter and 2tbsp maida
11)mix well and cook for 1 min
12)Add 3/4 cup milk and keep stirring until it thickness
13)Add the cooked prawn mixture ,pepper powder and mix well
14)Add 2tb cheese(or more as per your requirement) ,mix and turn off flame
Note :check for the salt if required

For outer cover:
1)heat a pan ,add 1 cup water followed by salt and  butter
2)once the water comes to a boil add 1 cup maida part by part
3)cook till a dough is formed and turn off flame
4) knead the dough while its hot(just be careful)
5)divide the dough into equal portions(other portion keep in bowl and cover to avoid the dough from becoming cold)
6)roll the dough like a chapati to slightly thick
7)using a cutter ,cut circles
8)place the filling in the center and seal the edges
9)In bowl take breadcrumbs or semolina or (equal quantity of both)
10)In a bowl break one egg and add 2tb sp water and whisk well
11)dip the rissois into the egg and coat with breadcrumbs+semolina
12)heat pan/vessel with oil and deep fry the rissois till golden brown
Note:the oil should not be too hot
