The key to making this broccoli dish is to season using two types of soy sauce and salt. Additionally, cook the broccoli, adjusting the doneness to your taste.

Ingredients
300g broccoli
3~5 cloves garlic
1 tablespoon vegetable oil
2 tablespoons sesame oil (1 tablespoon for stir-fry, 1 tablespoon to finish the dish)
1 tablespoon dark soy sauce
1/2 tablespoon light soy sauce
1/3 cup water
1/2 teaspoon kosher salt
1 tablespoon toasted sesame seeds

Instructions
1. Immerse the broccoli, head down, in cold water for 5 minutes.
2. Separate the florets of the broccoli from the stem. Slice the broccoli into half-inch thick pieces. Slice the garlic.
3. Heat the vegetable oil and sesame oil in a pan. Add the sliced garlic to the pan and stir fry until light brown. Add the broccoli pieces to the pan, and thoroughly mix.
4. Season the broccoli with dark soy sauce and light soy sauce. Pour water into the pan, cover it with a lid, and cook it for about 3 minutes.
5. Open the lid and fry over high heat for about 1 minute to evaporate the liquid Add salt and sesame oil to the pan.
6. Turn off the heat and add salt and toasted sesame seeds to the pan.
