Serves 1 or 2 Nutritional Information for the whole recipe: Cal: 289 | Net Carbs: 5g | Fiber: 2g | Total Carbs: 7g | Fat: 24g | Protein: 12g Ingredients: 26g/4 tbsp Almond Flour 2g/1 tsp Coconut Flour ½ tsp Baking Powder Pinch Salt 25g/3 tbsp Sweetener 44g/1 Egg 1 tsp Lemon Rind, finely grated 22g/2 tbsp Lemon Juice 20g/2 tbsp Cream 10g/1 tbsp Oil ½ tsp Vanilla 20g/2 tbsp Blueberries COCONUT FLOUR VERSION: Replace the 28g of Flour (above) with 2 tbsp Coconut Flour, then follow the next steps in the method. I found I needed to microwave for an extra 30 seconds for the cake to cook in my 700w microwave.
