Slow Cooker Chicken Thighs
Easy slow cooker chicken thigh recipe.  It's simple to prepare. Just season, sear, add to the slow cooker, cover with a delicious prepared seasoned garlicky soy sauce and walk away while it slow cooks for about 5-6 hours. Served over white rice.

Shopping List:

Servings: 4

1 tbls. Olive oil
4 bone-in skin-on chicken thighs
Kosher salt and black pepper
1/2 cup soy sauce
1/2 cup ketchup
2 cloves minced garlic
2 tbls. hot sauce
Juice of 1 lime
Lime slices and parsley for garnish
Serve over white rice

Directions:
Season both sides of the thighs with Kosher salt and black pepper. Be generous.  
Heat the oil on medium high. Sear each side of the thighs for 3 minutes each then place them into the slow cooker, preferably on a rack if you have one to keep them from cooking in all that fat.
In a bowl mix together the soy sauce, ketchup, garlic, hot sauce and the lime juice.  Pour that mixture over the chicken thighs.
Cover and cook on low for 4-5 hours.  Note: Some slow cookers cook faster than others so know your slow cooker. Chicken should reach 165 internal when done.
CROCK POT TIP: RESIST REMOVING THE LID WHILE IT'S COOKING ESPECIALLY DURING THE FIRST 2 HOURS. EVERY TIME THAT LID IS TAKEN OFF YOU'LL LOSE 15-20 OF COOKING TIME. YOU WANT TO KEEP THAT HEAT IN THE SLOW COOKER.
When the center is no long pink, remove the thighs from the slow cooker onto a bed of cooked white rice.
Garnish with chopped parsley and lime slices. Serve immediately!!!!  
Note: If you can't serve immediately and need to keep it warm, either place it in a 200-250 degree oven or leave it in the slow cooker on the warm setting.  You have to keep it above 140 degrees for safety. Never leave food out for more than 2 hours.
