Just like how locals may not be familiar with Hangzhou Beef Soup or Westerners with fried rice from the West initially, this dish is named after the distinctive taste of Singapore, thanks to the use of Singaporean-style curry sauce. Over time, these flavors have circled back to their roots. To achieve the perfect stir-fried rice vermicelli, attention to both cooking details and ingredient selection is crucial. Opt for rice vermicelli where the primary ingredient is rice, imparting a delightful rice fragrance to the dish. The ideal color should be a natural, light beige, with the rice vermicelli separated and easy to cook. When it comes to curry, choose according to your preferences. For a taste reminiscent of Hong Kong-style tea restaurants, go for Hong Kong-style curry paste. Note that turmeric powder is different from ginger powder. Turmeric powder, lacking a distinctive aroma, is mainly used as a coloring agent, for example, to achieve a golden hue in dishes like Hainanese Chicken Rice. On the other hand, ginger powder combines the fragrances of sweet orange, ginger, and southern ginger, serving as both a spice and coloring agent, commonly used in curry preparation.
