Learning how to knead stick dough by hand can be fun and easy for the beginner.  If you don’t have a mixer, it’s not only possible, but fun.  This is meant to be a beginners guide to kneading sticky dough by hand without adding more flour.  There are more advanced techniques out there once you grasp how to knead dough and I encourage you to try all methods so you find the one that suits you.

This is an 80% hydration rate, which simply means using 80% liquid of the total amount of flour.  So if you have a 100g of flour, you’ll use 80 grams of water.  It can be really rewarding to learn how to knead high hydration dough by hand.  

I’m showing this technique so you can refer back to it when making sticky dough recipes.  Feel free to fast forward, pause or rewind in order to find the section you require.  Kneading dough wasn’t that hard, now was it?  What are you going to bake now that you’ve learned this technique?  Perhaps some delicious dinner rolls are in your future.
