Hi there! Today I want to bring you a 100% fruit spread or jam recipe. Strawberries, peaches and dates. That is all. We are going to make a liquid pectin out of apples first and then make our no sugar jam. This has no sweeteners, no honey and no sugar. I hope you enjoy it! I promise you it is delish!

ALL FRUIT SPREAD

Liquid Apple Pectin

Makes about 1.5 cups3 apples - the less ripe the better
6 cups water

Wash the apples well. Don’t worry about coring or seeding them. Chop them up and place them in a pot.  Cover with water.

Bring the pot to a boil. Reduce the heat and simmer for about 2 hours — until the apples are amber in color. Do not cover the pot. Remove them from the heat when ready.

Place a colander over a bowl. Line the colander with two pieces of cheesecloth or two cotton dish towels. Pour boiling water onto the colander, making sure to cover the cloth. Swirl the bowl with the boiling water and throw it out. We are trying to minimize contamination by doing this.

Pour the cooked apples into the colander. Be careful not to let it fall into the bowl. Do not squish the fruit. Let it drip, undisturbed, into the bowl for 2 to 3 hours — until no more liquid is dripping down.

Transfer the liquid pectin to a heavy saucepan. Simmer for about 5 to 10 minutes — until slightly reduced. Remove from the heat.

Sterilize a container with boiling water. Pour the hot liquid pectin into the container. Let it cool down and store in the refrigerator for up to 6 weeks. You can also freeze it for up to 6 months.


Fruit Spread

Makes about 2 cups
3 cups chopped strawberries
1 large peach - peeled and chopped (About 1 cup of fruit)
6 dates — pitted and cut into strips
1 cup liquid apple pectina squeeze of lemon juice (about 1 teaspoon)

Place all the fruit in a heavy pot. Add the pectin and lemon juice.

Bring the pot to a boil and reduce the heat. Simmer for about 20 to 25 minutes — mashing the fruit as it cooks.

Blend the fruit spread until all the dates are creamed. Leave some fruit in the spread. If you do not have an immersion blender, separate half of the spread and blend it. Return it to the pan. Make sure to include all of the dates.

Sterilize your containers with boiling water, including the lids. Fill with the spread and refrigerate for up to 6 weeks.
