Today we Smoked Beef Cheeks on our 18 inch Weber Smokey Mountain (WSM) smoker using our PitMasterIQ 110.  Smoked at 275 degrees for 2 hours. Removed to a pan with sliced onions, garlic and added about 16 ounces of beef broth. Returned to smoker until the internal temperature reached 210 (About another 2.5 hours).  Let rest, then shred. And OMG they were delicious!  Tastes similar to a brisket flat.  In the video I show making a double decker taco, but off camera I made one with soft corn tortillas and they were amazing as well.
