※ There are two kinds of chocolate. One is for coat, which doesn't need to do tempering and the other one is couverture chocolate, which is rich in taste and needs tempering.
It's better to use couverture chocolate because it's delicious! I did not have much of it, so I mixed coating chocolate and couverture in 1:1. The more you put coating chocolate, the more mixture gets thick and stiff.

※If you want to use only couveture chocolate, you have to harden it for more than two hours. It should be solid because it can be easily removed from silicone mold. I mixed it with coating chocolate, so it got harden so fast.
★★If you only use couveture chocolate, you can feel softness from it though it is cold. If you only use coating chocolate, you can feel softness after it gets warm★★

※ If you are going to use a mold, you should use a silicone mold because you can easily remove chocolate from it. If you don't have a mold, use any square container putting wrap under the bottom. When you cut chocolate, put a knife into hot water, remove water and cut it.

※ You can search molds, strawberry dice and powder through Internet.

※ Please store it in cool temperature that doesn't have any sunshine. You can also store it in a refrigerator.

Makes about 20 strawberry chocolate paves
380go of dark chocolates (couverture type) , 180g of whipping cream, 40g of softened unsalted butter at room temperature, 8g of corn syrup, dried diced strawberries, strawberry powder
