Being the season of Lent ,many of us are switching to only veg meals while some might have only veg,fish & eggs..
So I thought I might help you out with simple yet tasty veg recipes as mostly veg means some simply boiled veg with a lil coconut sprinkled on the top..So along with the days recipe I will leave links of what you can prepare for breakfast as well as Dinner..


Ingredients
1 cup of peanuts soaked for atleast 4-5  hours/overnight
½ tbsp of tamarind soaked in 1/4 cup of warm water for 10 mins and then the tamarind juice extracted
½   tsp of mustard seeds/rye
½ tsp asafotedia/hing
½  tsp haldi /turmeric powder
½ cumin seeds/jeera
A few curry leaves
1 tbsp of goda/kala masala

½ tsp of gul/jaggery
½ tsp of red chilli powder
Salt to taste
1 & ¼ cup of water

Method

Heat 1 tbsp of oil in a pressure pan/pan
Heat Oil in a pan,once the oil is hot add the rye/mustard seeds,hing,haldi,cumin seeds,curry leaves and fry well ,add the peanuts after draining out the water, well..add the goda masala,red chilli powder,tamarind juice ,salt to taste,gul and everything well..add  the water ..mix well..close the cooker &cook for 1 whistle on high  and  simmer for 10 mins. Once done garnish with a mix of fresh coconut & chopped corriander
