Today's recipe is a crispy bhendi bhaji .I love to club this with simple dal and rice.कुरकुरीत भेंडीची भाजी.
here are the ingredients and method
ingredients
300 gms of bhendi/okra
7-8 kokums/amsols
1/2 tsp of mustard seeds
1/2 tsp of cumin seeds
1/2 tsp of asafotedia
1/2 tsp of turmeric powder
1 tsp of red chilli powder/to taste
salt to taste
1 tsp of roasted cumin powder
1  tbsp roasted coriander powder
Method
Heat 2 tbsp of oil in a pan,once the oil is hot,add the mustard seeds,cumin seeds,asafotedia and turmeric..add the kokum and fry well,add the thinly sliced bhendi.The okra bhendi  has to be washed & wiped completely dry & cut into very thin pieces as shown in the video.Now do not cover the pan ,but keep stirring in between and fry the bhendi very well.Now add the salt,red chilli powder,cumin powder and coriander powder,continue frying till  the bhendi is very crispy.
This recipe is a lovely crispy version of bhendi bhaji...the trick is you cook it open ,that is without a cover ,stirring in between till the okra /bhendi is nicely fried and all the lovely spices coat the bhendi well...
The amsol/kokum or mangosteen in english... is used as it soaks the sliminess of the okra .bhendi
