A delicious bite size treat that is easy to make and will look great on a dessert table at Christmas time or even for a baby or bridal shower.
These are creamy tasting with a delicious hit of cherry and chocolate.  The jello is quite firm and can be easily eaten with your fingers.

1/3 cup boiling water
1 package (3oz-85g) packages of cherry jello (gelatin powder/ jelly powder)
5 oz or 150 ml of evaporated milk (I think cream or regular milk would be okay too)
2 oz (60g) of chopped up semi sweet chocolate (I used 1/3 cup semi sweet chocolate chips)
Approx. 12 Maraschino cherries with stems (if you can find them, mine are grouped with the ice cream toppings at the grocery store).

Add boiling water to jello and stir until dissolved.
Heat the evaporated milk and the chocolate in the microwave on high for a minute or so until milk is hot (to this on low heat on the stove in a pot if you want).  Stir until chips are melted and you get something that looks like hot chocolate.
Pour the chocolate/milk mixture into the jello/water mixture and stir well.
Pour the completed mixture into small molds so that each cherry bomb has about 2 tablespoons in each.
Refrigerate until starting to set, this takes about 10 minutes.  You want it to be still slightly liquid so that the cherries will stick to them.
Press a cherry into the top of each, trying to make sure it sticks and that half the cherry is sticking out of the mixture.
Refrigerate until completely set, about 1/2 an hour or so.
Unmold and serve.

*notes*
I tried this recipe twice.  The first time I thought all the cherries came loose because I had let it set too much before adding the cherries.  The second time, I made sure that the mixture was liquid enough to sink the cherries a good way into it and I though they were firmly stuck.  They STILL popped out when I was trying to unmold them. Cherries popping everywhere ;)
I greased my mold with cooking spray before filling.
I also tried to dip the bottoms of my molds in warm water for a few seconds prior to unmolding and the cherries still came out.
