- 2 tablespoons raisins
- 2 cups water
Instructions:
1. *Prepare the Milk:*
- If the milk is already spoiled and curdled, you can use it directly.
- If you need to curdle the milk, heat it until it separates into curds and whey. Strain the curds from the whey using a muslin cloth or fine sieve. The curds will be used in the halwa.
2. *Roast the Semolina:*
- Heat a heavy-bottomed pan on medium heat.
- Add the ghee and let it melt.
- Add the semolina and roast it, stirring constantly until it turns golden brown and emits a nutty aroma. This should take about 7-10 minutes. Be careful not to burn it.
3. *Prepare the Syrup:*
- In a separate pot, bring 2 cups of water to a boil.
- Add the sugar and stir until it dissolves completely.
- Add the cardamom powder to the syrup.
4. *Combine Ingredients:*
- Once the semolina is roasted, slowly add the hot sugar syrup to it, stirring continuously to avoid lumps.
- Add the curdled milk (curds) to the mixture and stir well.
- Cook on low heat, stirring frequently until the mixture thickens and starts to leave the sides of the pan.
5. *Add Nuts and Raisins:*
- In a small pan, heat a little ghee and fry the chopped nuts and raisins until golden.
- Add the fried nuts and raisins to the halwa and mix well.
6. *Serve:*
- Once the halwa reaches the desired consistency, remove it from heat.
- Serve hot, garnished with additional nuts if desired.
