Today I will be making a traditional Persian recipe it’s called Ghormeh Sabzi- قورمه سبزی   It’s a Persian herbed stew.

Ghormeh Sabzi is said to be Iran’s national dish!

Ghormeh meaning: Stew
And Sabzi meaning: Herbs

Substitute the meat: Vegetarian Ghormeh Sabzi may substitute, mushrooms For the meat.

The government of Iran has declared an International Ghormeh Sabzi Day.

The last Saturday of each November (First Shanbeh of the Month of Azar in Solar-Hijri Calendar) Was declared as the International Ghorme Sabzi day (Persian: روز جهانی قرمه سبزی)

By Iranian ex-pats to familiarize people of different cultures with Iranian Cuisine and history.

This unofficial holiday is usually two days after Thanksgiving Day in the United States.

Ingredients:

2 Pounds of cubed meat (907g) You can use chicken or Lamb also
1 Cup Red kidney beans uncooked (Make sure to soak them in water the day before)
1 Large onion (Diced)
3 Cloves of garlic
3 Bunches of parsley (100g each)
3 Bunches of green onions (Green part only)
1 Bunch of spinach (200g)
1 Small bunch of fresh Fenugreek (Or 2 tablespoons of dried Fenugreek) BUY FROM AMAZON
5 Dried lemons (Soaked in boiling water for 15 minutes) Poke holes with a fork on each lemon
BUY FROM AMAZON / Or use fresh lemon juice to taste (supposed to be acidic)
2 Tablespoons Turmeric powder
Salt (To taste)
Pepper (To taste)
Olive oil for cooking
4.23 Cups of water (1 Liter) use the water the dried lemons were soaking in and add more
Water to complete the 4.23 cups or 1 Liter.

How to make it:

1- Wash all your herbs and cut in small pieces
2- Place inside a bowl
3- When you finish cutting all the herbs, place them in the food processor
4- Process on low (They are supposed to have texture)
5- Stir fry the herbs and add the fenugreek leaves
6- Cook on medium-low heat  for 8 minutes stirring constantly to avoid burning them
7- Put them aside for later
8- Fry the onion and garlic until they are translucent in color
9- Add to a large pot
10- Add the meat to the large pot
11- Add the salt, pepper & turmeric
12- Now add the fried herbs to the pot that has the meat
13- Add the dried lemons
14- Add the red kidney beans (DRAINED)
15- Add the water that you used to soak the dried lemons in
REMEMBER YOU NEED TO ADD 4.23 CUPS // 1 LITER OF WATER IN TOTAL
16- Stir everything well and cook on low heat
17- Cook until the beans are tender and the meat is tender
18- The cooking process takes anywhere between 2 1/2 hours to 3 hours

SERVE WITH FRESHLY MADE PERSIAN RICE!!
